Buffet Selections

When you are hosting a large gathering, serving buffet style will give your guest a chance to mingle and enjoy the foods of their choice. Larimer Catering offers every client a customized menu. The selections listed below are some of the items served at previous events. We are glad to provide you with authentic foods of any origin.
 
All our hot buffets include a freshly tossed green salad, baked rolls and butter as well as a tempting tray of desserts. Many of our selections can be easily adapted for guests with specific dietary or allergy conditions, just let us know. We look forward to serving you.
 

BEEF


Lean eye of the round roast slow-cooked in a fragrant Italian tomato sauce. Served with a side of creamy cheese polenta and a vegetable. Please allow 48 hours for preparation.


Beef filled corn tortillas covered in red chile sauce and Mexican cheese. Served with Mexican rice and beans.


Chunks of beef are slowly simmered in a hearty stock with root vegetables and finished with baby peas. Served with our own jalapeno cheese cornbread.


Pepper crusted beef is slow roasted, thinly sliced and finished with mushroom gravy. Served with garlic and herb mashed potatoes and a vegetable.


Smothered with mushroom and tarragon gravy and served with garlic and herb mashed potatoes and a vegetable.

PORK


Italian sausage, ricotta and mozzarella cheese stuffed manicotti are baked with a tangy Marinara sauce and finished with creamy Alfredo. Served with a side of vegetable.


Apple and cranberry stuffed pork chops served with a savory onion jus and complemented with a side of herbed mashed potatoes and green beans.


Lean pork loin is pounded thin, coated with seasoned bread crumbs, sautéed until golden then finished with a lemon pepper cream sauce. Served with garlic herb mashed potatoes and a vegetable.


Moist slices of pork topped with a caramelized onion gravy. Served with oven roasted potatoes and glazed carrots.

POULTRY


Lightly grilled chicken breasts in our own green chili cream sauce served with rice pilaf and warm corn and sweet pepper salsa.


Chicken filled corn tortillas covered in red chile sauce and Mexican cheese. Served with Mexican rice and cumin scented beans.


Chicken with artichoke hearts, baby spinach and sun dried tomatoes in a velvety chicken veloute sauce served wtih herb and butter bow tie pasta and a vegetable.


Cardamom scented chicken breasts, lightly sauteed and finished with an apricot and ginger sauce. served with fragrant basmati rice and a vegetable.


Tender chunks of white meat chicken are simmered in an aromatic coconut and tomato curry sauce. Served over rice with a vegetable.


Lightly grilled chicken breast is topped with sautéed mushrooms in a sweet Marsala wine sauce. Served on a bed of fettuccine and a side of vegetable.


Grilled chicken breast served on sautéed spinach and topped with a fresh basil and white wine cream sauce. Served with garlic mashed potatoes and a vegetable.


Herb floured Chicken Breasts Sautéed Golden Brown and finished with a White Wine, Lemon, Caper, Butter and Cream Sauce. Served with Garlic and herb Mashed Potatoes and a vegetable.


Sautéed Chicken Breast is stuffed with Lump Crab Meat and Asparagus and topped with Lemon Tarragon Sauce. Served with curried rice and a vegetable. Also available with Beef Tenderloin.


Dark meat chicken is gently braised with sweet peppers, onions and garlic in a fiery tomato sauce and accompanied by buttered herb noodles and a vegetable.


Chicken Breast Marinated in Fresh Ginger Teriyaki then Char grilled and topped with fresh Pineapple. Served with curried rice and a vegetable.

SEAFOOD


Atlantic salmon filet coated with a mixture of Japanese breadcrumbs and our own pesto baked and served with a lemon beurre blanc. Accompanied by fluffy rice pilaf and seasonal vegetables.


Tender filets of tilapia are topped with crushed walnuts and baked until golden brown over an Orange Dill Cream sauce. Served with a delicate rice pilaf and a vegetable.


Salmon filets are baked with sweet ginger glaze and topped with fresh Mango cilantro salsa. Served with curried rice and our vegetable of the day.


Seasoned Cod filets are baked and topped with fresh tomatoes, capers and olives sautéed in fruity olive oil. Served with herb and vegetable Orzo pasta.

MEATLESS


Filled with spinach, peppers, onions and goat cheese, topped with breadcrumbs and baked with marinara sauce until crust is golden. Served with herbed couscous. Suitable for vegetarians.


Classic Alfredo of only Cream, Butter and Parmesan Cheese. Served with a vegetable. Also available with Chicken or Shrimp.


Sweet bell peppers stuffed with a mixture of sautéed vegetables, tofu and rice, and baked in a fragrant herbed tomato sauce. Served with a side of sautéed Swiss Chard.


Fresh Basil, Tomatoes and Garlic are sautéed in Olive Oil and then tossed with Angel Hair. Served with a vegetable and Parmesan on the side. Also available with Chicken or Shrimp.

An Italian Classic. Served with a side of Spaghetti and our vegetable of the day. Suitable for vegetarians.


Alternating layers of pasta and meat or vegetables with fresh Ricotta cheese in a thick savory tomato sauce. Served with garlic encrusted baguettes and a vegetable. Available with or without meat.
